Cheesy Artichoke Breakfast Casserole

Sunday morning brunch is something our family looks forward to each week. This breakfast casserole recipe is super easy and has amazing flavor. Weekends are for relaxing and this really can be mixed up so easily and served to the masses. Heck, it is so easy I might even have the neighbors join us! The more the merrier, right?

Simple meal for the every day and holidays

Life gets super busy and I am always looking to slow down. This breakfast casserole recipe is great for simple living and enjoy each others’ company on the weekends.

And, with the holidays fast approaching this cheesy artichoke breakfast casserole is also perfect for Christmas morning. It can be made ahead of time and refrigerated until you are ready to pop it in the oven. Christmas morning is hectic enough without having to worry about breakfast. Pop this casserole in the oven when you get up and it will be ready after all the presents are open.

This casserole has all of my favorite breakfast foods. Eggs, cheese, and artichokes. Serve this casserole with a side of hash browns. I love hash browns, extra crispy!

Everyone seems to enjoy a breakfast casserole! Experiment with it, add some other ingredients that you love. When I made this there really was not even a piece left in the baking dish. The family gobbled it right up! It can feed quite a few people too!

Cheesy Artichoke Breakfast Casserole


  • 10 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 16 ounce container of cottage cheese
  • 2 cups of co jack cheese
  • 1/2 stick butter
  • 1 teaspoon seasoning salt
  • 1/2 cup chopped onion
  • 1 13 ounce can artichoke hearts
  • Garnish: sour cream and basil


  1. Combine eggs, flour, and baking powder in a large mixing bowl.
  2. Stir in cheese.
  3. In skillet, melt butter and saute onions with drained artichokes, as well as seasoning salt.
  4. Stir artichoke mixture into cheese mixture and blend well.
  5. Pour into a greased 9x13 inch glass baking dish.
  6. Bake uncovered at 350 for one hour until mixture is set and golden brown.
  7. Let stand for a few minutes before serving.
  8. Garnish with a dollop of sour cream and fresh basil leaves.
  9. Makes 8 servings.

Easy and delicious cheesy artichoke breakfast egg bake


I had to add a sprig or two of basil as a garnish to this breakfast casserole. We grew this basil in our garden this year. I was so excited to be able to harvest some fresh herbs and vegetables. Basil is one of my favorite ingredients to add flavor with. And, its color is the perfect shade of green.

Doesn’t this just look so pretty? I am not a great cook by any means, so when I can plate up a meal that is both pretty and delicious…well this is a total win in my book.

Fresh Peach Berry Cobbler

Hey friends! Today I am sharing our recipe for fresh peach berry cobbler.

Our family made this and the cobbler was gone in an hour. It. Was. That. Good.

I was so delighted that this recipe went over like hot cakes with the family. I really don’t even think my husband got to have his own dish because the girls went crazy for it. And, yes…I do feed them on a regular basis.

The recipe is pretty simple to make which is what I am all about when it comes to baking and cooking. Simple and easy.

This cobbler is full of fresh peaches and blueberries. The blueberries were frozen from when we went blueberry picking. That was a fun family event.

We have had amazing luck this season with our peach selection. They have been so sweet and juicy.

I always add some lemon juice over the top of my sliced peaches to keep them from browning.

Fresh Peach Berry Cobbler by Dandelion Patina


  • 1/4 cup sugar
  • 1/4 cup brown sugar, packed
  • 1 Tablespoon cornstarch
  • 1 cup water
  • 1 Tablespoon lemon juice
  • 3 cups peeled and sliced fresh peaches
  • 1 cup blueberries, fresh or frozen
  • dash of vanilla
  • Topping:
  • 1/2 cup sugar
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted to sprinkle over batter
  • 2 Tablespoons sugar
  • 1/4 teaspoon nutmeg


  1. In a sauce pan, combine sugar, brown sugar, cornstarch, and water.
  2. Cook over medium heat, stirring constantly until thick.
  3. Remove from heat
  4. Add the lemon juice, peach slices and blueberries along with a dash of vanilla.
  5. Turn the peach mixture into a greased 2 quart glass baking dish.
  6. Topping:
  7. Mix sugar, flour, baking powder, and salt.
  8. Beat in milk and butter until smooth.
  9. Spoon the topping over fruit mixture. This will rise and spread as it bakes.
  10. Mix sugar and nutmeg
  11. Sprinkle over entire cobbler.
  12. Bake in a preheated oven at 375 degrees for 40-45 minutes.
  13. Remove from oven and serve in small dishes with a scoop of ice cream.
  14. Makes 6-8 servings.

Garden Fresh Bruschetta

Who doesn’t like garden fresh? Garden fresh bruschetta is a summer time staple in our home. This is the first year we have had a garden in 6 years! Let me repeat that… 6 years. So, I am just giddy about walking out the back door of our home and picking what I need for this delicious summer time favorite!

And did I mention it is simple and easy?

Our garden has done fabulous this season! I am quite surprised because we tried a different kind of raised bed.  I’m just love having fresh vegetables on hand. Now, don’t get me wrong, I love going down to the farmers market and strolling through the vendor tents. It is such a relaxing, simple way to start a weekend.

But, when I can enjoy a good cup of coffee while strolling through my garden in the morning sunlight. It doesn’t get better than that! Nothing beats growing your own veggies. Well, maybe a bit of retail therapy, but that is a whole other post.

I picked up an oven fresh garlic artisan loaf from the grocery store for my bruschetta. It smells amazing with big chunks of garlic. Yum! It is a challenge at times finding good bread in the grocery store. Luckily, there is also a specialty bakery that vendors at the farmers market on the weekends. I lucked out checking the grocery store at the last minute.

Doesn’t it look delicious? All that golden crusty goodness on the outside and softness on this inside.

  • Artisan garlic loaf or other specialty bread
  • Small Onion
  • Small bunch of Basil
  • Small bunch of Cilantro
  • Garden Fresh Tomatoes
  • Block of Parmesan Cheese
  • EVOO
  • Salt & Pepper


  1. Dice tomatoes
  2. Dice onion
  3. Chop basil
  4. Chop cilantro
  5. Mix fresh garden ingredients in a mixing bowl to taste with EVOO
  6. Cut and toast bread
  7. Place bruschetta mixture on toasted bread
  8. Salt and pepper to taste
  9. Grate cheese over the top
  10. Enjoy!

It can be a chaotic time with little kids running around looking for something to do.

They may have even asked that dreaded question a million times….

Shopping tip:

I love to have the kiddos write down their own list for the ingredients on these turkeys. It keeps them busy while shopping for your Thanksgiving meal items and teaches them a bit about recipes, shopping, and money.

Kitchen Essentials:


  • Start by placing your Golden OREO’s into the food processor and crush until the OREO’s are like cookie crumbs.
  • Mix in your softened cream cheese bar.

  • Use a cookie dough scoop or spoon to create 1 inch balls.
  • Roll these in your hands to form.

  • Place on a cookie sheet with parchment paper or wax paper. Place balls in freezer for 10 minutes.
  • Following directions on the baking chocolate package, melt and cover your OREO cookie balls.
  • Roll the balls in the crushed pretzels to cover completely.

  • Gather a few bowls for frosting the pretzel feathers.
  • Place cream cheese frosting into each bowl and add your food coloring gel. Mix well.
  • Take your pretzel sticks and swirl the tips in the colored frosting.
  • Then push the pretzel stick into the crushed pretzel ball body.

  • Take a peanut shell and make an indentation on the top of the ball.
  • At this point, create your turkey face with black writing gel for the eyes.
  • Then, cut small triangles from dried mango pieces for the beak and adhere to the peanut with the melted chocolate. Clean up edges with a toothpick.
  • Finally, add melted chocolate to the bottom of peanut and place inside the indentation previously made.
  • Once you have the desired amount of turkeys, place your cookie sheet into the refrigerator for 1 hour.

I served my turkeys with dark Belgian chocolate dessert cups on white cupcake pedestals.

  • 1 pkg (8 oz.) brick cream cheese, softened
  • 36 OREO Cookies, finely crushed (about 3 cups)
  • 4 pkg (4 oz. each) semi-sweet baking chocolate, melted


  1. MAKE IT!
  2. MIX cream cheese and cookie crumbs until blended.
  3. SHAPE into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan.
  4. CUSTOMIZE it with your own ingredient additions or decorative embellishments
  5. REFRIGERATE 1 hour or until firm
  6. Share and enjoy!


Optional Ingredients include:

Pretzels sticks for turkey feathers. Crushed pretzels for bodies. Shell peanuts for turkey bodies. Dried mangos for turkey beaks. Black writing gel for turkey eyes. Cream cheese frosting and food coloring gel for tail feathers.

White Velvet Cut Out Cookies

 I have a secret to share with you!

I don’t bake.

I mean, not often.

But, I wanted to share this white velvet cookie recipe with you

this season because what is Christmas without baking?

This recipe is one that my family has been using for the last few years.

On Christmas Eve,we have a reindeer dinner.

We go all out with the reindeer plates, napkins, glasses, and even antlers.

My daughters love the themed party!

They strategically chose which reindeer they are going to be for the evening.

Each reindeer has a personality attached to its name

and special way of dancing or prancing.

Each year after leaving the Lepak house

Santa has to adjust that belt buckle.

And frankly, so do I.

As they say,

A moment on the lips.

Forever on the hips.

But, hey it’s Christmas!

We can worry about the hips in our New Year’s resolutions, right?


White Velvet Cut Out Cookies

2 C butter, softened

1-8 oz cream cheese, softened

2 C sugar

2 egg yolks

1 tsp vanilla

4 ½ C flour



3 ½ C powdered sugar

1 Tbs shortening

3 Tbs butter, softened

½ tsp vanilla or desired extract flavor

3-4 Tbs milk or cream


Cookies: Cream butter, sugar, cream cheese until fluffy. Add egg yolks, vanilla. Gradually add flour until combined. Roll out and cut into desired shapes. Put on a baking sheet. Bake at 350 degrees for 10-12 minutes.


Frosting: Combine 1 ½ C powdered sugar, butter, shortening, vanilla, and 3 Tbs milk. Beat until fluffy (3 min). Add rest of powdered sugar and beat until fluffy and spreadable.

we bake, all evening.

A special cookie cutter is used just for this occasion.
